Yes, you can hide the notch based on the apps you use on the Galaxy S23.

1. Go to Settings > Display > Camera cutout.

2. Pick the app you want the camera cutout to be hidden and select Hide camera cutout.

3. After that, you will see a black bar at the top screen to cover the camera cutout when using this app.

4. Repeat Step 2 for other apps you want the camera cutout to be hidden.
