Can I create a sub-album/folder in an album in the Samsung Gallery app? For example, I want to create a photo album for a vacation; inside this album, I want another folder/album just for the videos. Is that possible?

You can't create another album within an album. What you can do is to create one album for your vacation photos and another album for your vacation videos, then group them together. For example:
